config: add an option to name the sysroot directory

Depending on local policies, some users have expressed a need to
have the sysroot be named differently than the hard-coded name.

Add an option for that.
Default to 'sysroot' to match the existing literature.

While at it, replace 'sys-root' with 'sysroot' everywhere we
reference the sysroot.

     6       'Bare metal' refers to those programs that run without any kernel.

     8       You probably want to say 'y' here if you plan to use your compiler
     9       to build bootloaders. It is not yet suitable to build Linux kernels,
    10       though, because the APCI stuff relies on the target C library headers
    11       being available?!?!...
